Can the GEW 88 be loaded as a single shot by just dropping a round in the chamber and then closing the bolt? Is the extractor designed to snap over the rim of the cartridge? Can the extractor be broken by this procedure? OR, does the rifle HAVE to be loaded with an en bloc clip or a single shot adapter clip? Thanks for your help.

No

There are some variables, etc. Generally speaking this is the case.

I find a loading block easy for single fire, You do not want to stress an extractor. I use these on Gew 88s and Berthiers. Expensive little buggers. Of course each rifle has its own style block. original enblock clips work too, but are getting difficult to find at gun shows.

Push Feed is what it is commonly called. Dropping one in the chamber and closing the bolt will not "stress the extractor" as it is designed to do exactly that. When a round is pushed out of the mag, it is pushed forward by the bolt head rim until it shoulders in the chamber. Then the extractor snaps over the rim as the bolt is closed.
